Vegan Hot and Sour Soup
The other day I was sitting at the kitchen table working on the site and got a hankerin’ for hot & sour soup. I used to love, and I mean freaking love, hot & sour soup. Ever since I became a vegetarian I have cut it out since most contain chicken/meat based broth. I always get so jealous when Greg orders it at Chinese restaurants because it smells so good. Mmm.
I found a recipe for it in “La Dolce Vegan” by Sarah Kramer so I decided to try it out. I gathered all the ingredients and got to work.
It turned out really good! Even Greg who usually hates what I make and anything with vinegar liked it! Haha. He was hesitant to try it at first and kept saying, “I know you put vinegar in there! I saw you!!!” Geez! But he eventually got brave enough to try some. :]
I didn’t add peas and towards the end I added a little bit of cornstarch mixed with water to thicken it up. I can’t really remember how Chinese restaurant H&S soup tastes like.. I just remember it was good.. so I can’t really compare, but this turned out really great, was cheaper than eating out and a lot healthier I’m sure.Uncategorized | Tags: Soup, Vegan | 2 comments
