Things I Love About Knoxville: Just Ripe

I really love getting peeks into amazing shops and restaurants in other cities, so I thought it’d be fun to share a few things I love about Knoxville every once in awhile. Even though it’s a smallish city, there is a lot to love here!

Located in downtown Knoxville, Just Ripe is not only a mini healthy grocery store, but also a fantastic café that serves various grab & go items, fresh juices and desserts. Everything is so fresh and affordable which makes it such a great addition to downtown.

As I walked around the store I noticed that many items are local and regional and marked as such on the shelves. There’s also things from a lot of small, independent distributors and the business itself is cooperatively owned and operated which is really nice! The staff was so friendly and warm and the vibe was just great.

The sitting area is really comfortable with tons of natural light and the perfect spot to people watch. The menu is small, but you don’t need many choices as everything on the menu is so varied so there’s definitely something for everyone. It is also extremely vegan friendly and all you have to do is ask to make menu items vegan.

The best thing I’ve had there so far is the sweet potato burrito which is a filling of roasted sweet potatoes, sweet peppers and eggplant, rolled up with lime onions, toasted pecans, and housemade cilantro pesto. It’s served warm (I’m assuming a press is used) which makes the tortilla a little crispy and is absolutely delicious! I really love the combination of flavors and the pecans are awesome with the pesto.

I’m so happy that there’s a place like this where I live and if you ever come by my neck of the woods make a visit to Just Ripe, but be sure to give me a call beforehand so I can come get my grub on with ya! :]

  4. ahhhh i love that you’re sharing your favorite places! even though it’s going to make it even more gut-wrenching to leave when i move onto another school (whenever that might be).
