I made this tamale pie from Budget Bytes and it was incredible! It was surprisingly easy to make and that cornbread topping is amazing. I’m planning on just making a pan of the cornbread because it was so good.

Definitely check out the Budget Bytes site because it is really awesome and I love how she breaks down the prices of each dish. Also, it calls for canned enchilada sauce in the tamale pie recipe but just go ahead and make her recipe for it because it is delicious. It is also really, really easy to make and I will never buy the canned stuff again.

I’ve been making tons of these with Trader Joe’s stir-fry veggies, tofu, and soyaki sauce.

Greg & I had a pizza craving so we went to Papa Murphy’s and got a gourmet veggie pizza with regular pizza sauce instead of the garlic sauce. Be sure and sign up for their e-mail list because you’ll get coupons all the time for $3 off their family size pizzas.

This has nothing to do with food, but I did week 1 of Ripped In 30 again and I have barely been able to move for the last two days. I am so out of shape and am looking forward to getting back to where I was. I forgot how tough RI30 is when you first start it.

    • It is so good! I love artichokes on pizza. mmm.

      Yes, it is awesome yet horrible at the same time. I’m just now starting to feel normal again haha
