Weekend Food & Things
I made these roasted vegetable burritos over the weekend and they were even better than I thought they’d be. The veggies were so delicious that it was hard not to eat all of them out of the pan while I was getting everything else ready.
I love making meals like this because you can set all the toppings out and everyone can make theirs exactly the way they want. I used seasoned rice, black beans, roasted veggies, and avocado. They were awesome!
I also made a veggie curry that was pretty good. I used zucchini, cauliflower, and a bag of frozen mixed veggies which included green beans, corn, and peas. I think I may have messed up though because I used low-fat coconut milk (it was all I had on hand) when I should have used the regular kind. It still tasted good but I bet it will be even better when I make it again and use the regular coconut milk.
Working out has been going okay. It’s hard to find time during the day to make it work while the baby is napping. I’ve started a dvd many times, gotten through the warm up, and had to stop because she woke up. I have realized that I am just going to have to start exercising after her 5am feeding. I don’t want to, but that’s the only way I will be able to fit it in each day. I know that once I start working out at the same time each day I will get back into early morning workouts.
I did manage to do one of Jillian Michaels’ newer dvds last week and it was really tough. I did level 1 of Extreme Shed & Shred (the 30 minute workout). It was nice doing something new even if it was really hard and I wasn’t sure I’d make it to the end. My heart rate monitor needs a new battery and once I get one I will do it again and add it to the calories burned page.

that burrito recipe looks awesome. i’m definitely going to have to try that and freeze some like she did. i tried her recipe for red beans and rice the other night, and it was SO good. i bet it would be just as good veg too.

I didn’t even see her recipe for red beans and rice but now I think I’ll make it tonight.
The exercising is coming along slowly and I can barely walk the day after I workout now haha. I’ve been doing some videos from Blogilates that are really good.
