I Made Some Soup and Then I Danced
The first day of meal planning went well. I went out and bought all our groceries yesterday and spent $56 at Trader Joe’s and $44 at the co-op. I bought everything listed here, plus a few extras and things I’d forgot to list, such as mozzarella for our pizza and a couple of chocolate bars. Thankfully, we already had a pretty stocked pantry so I didn’t have to buy too much.
I’ll be pretty happy if $100 will get us a week’s worth of meals, including breakfast and lunch. Some of the things I bought, like the red curry paste, soba noodles, and miso will last us awhile so that’s good. I bought some rainbow chard which is a veggie I’ve never cooked with before so I am excited about that (how sad does that sound? haha).
I got home and washed and prepped all the veggies, put the Mexican corn and bean soup ingredients in the crockpot, and had an awesome dinner a few hours later.
I had one bowl plain and another topped with Greek yogurt, cheese, avocado, hot sauce, and a few crushed up tortilla chips. We had a lot leftover so I had another bowl for lunch today. This is one of those recipes I don’t think I’d get tired of. I did add extra chili powder and cumin to ours because I like to use a lot of spice when I’m cooking. Also, there isn’t any salt listed in the recipe, so just keep salting it until it tastes good. I don’t remember how much I used, but it didn’t take much.
My mom met up with me at Trader Joe’s that morning and we went next door to Toys R’ Us because they were having a sale on baby clothes. When I saw these little baby boots I had to buy them because they were so stinking cute and only $3! I know this has nothing to do with anything, but I had to show you all how adorable they are.
I went to Zumba yesterday with my sister and there were over 100 people with some crazy energy so it was super fun as always. I have no rhythm whatsoever and remember after my first class being a teensy bit embarrassed and feeling like I’d never get the hang of it so I never was interested in trying it again. I am so glad that I decided to take this class though because the right instructor and music can change everything. Don’t be afraid to try new things because you could end up having the best time. I still have no rhythm, but I have fun and that’s all that matters.
I’m off to get some beans ready for soakin’ so I can use them for the chili I’m making on Friday.

That soup looks amazing! I never thought to throw avocado on top- I need to start doing that! Also, those baby boots are incredibly cute.

Avocados were on sale for $1/ea at the grocery store so I stocked up and have been adding them to everything lately, which is fine by me :]
that soup with the avocado looks so good! i think i need to make it this week since i can’t catch a break with this weather.
I know what you mean about the weather. I keep reminding myself that if I can just get through February then it will get better from there. The soup is really good and perfect for this weather.
