Veggie burger night from last week’s meal planning. I used this recipe for the burgers and they were great. They didn’t fall apart at all.
I really liked the meal plan I made up last week since there was a lot of variety. I found a couple of new recipes my family really likes so I will be adding them into my tried and true recipe notebook. That’s always nice! We didn’t end up having pizza last week so I will add that to this plan since I already have the ingredients on hand.
Monday: Red lentil Thai chili for me and turkey chili for Greg
Wednesday: chipotle, corn, and black bean stew
Thursday: pizza with mozzarella, olives, mushrooms, tomatoes (TJ’s sauce & frozen whole wheat pizza dough)
Friday: veggie burgers using the recipe above with corn on the cob and broccoli on the side
I want to make these broccoli cheese patties for Waves this week too. That girl is obsessed with broccoli at the moment so I think she will really like them.
I didn’t have time to go grocery shopping today since I had to make a trip to Target to get some things (mainly cat food) and then we had to go to my sister’s baby shower in the afternoon. I did manage to celebrate national coffee day by making a stop at the Starbucks in Target. I got my usual: tall iced coffee, unsweetened with a bit of soy milk.
This was the best family shot we got from the baby shower. Now that Waves is walking everywhere she does not want to be held for long. She had such a good time watching and playing with the kids that were there. I’m really excited to meet my niece and Waves’ new cousin who will be here soon!
