Food Diary

Breakfast: Two slices of toasted Ezekiel bread with three egg white and iced coffee with unsweetened almond milk.

Morning Snack: Apple

Lunch: Kale salad (recipe from Oh She Glows). Stir-fry using a bag of frozen mixed veggies and this sauce I made the night before. The sauce was really good! The recipe called for anise stars which I didn’t use and it still turned out fine. I had never heard of that spice before, but it is beautiful! Check it out:

Afternoon Snack: Banana

Late Afternoon/Pre-Workout Snack: Ezekiel pita bread with almond butter. I ate half the pita with almond butter when I got home and when I realized I forgot to take a photo. I knew the right thing to do was eat the other half in order to take a photo so you all could see. :]

I wanted to work out but I didn’t feel like strength training or intense cardio so I went with Bob Harper’s yoga DVD. I’ve had this for awhile but never done it. Hour long workouts are just so hard for me to get into unless it’s a group exercise class with someone really there to motivate me.

This yoga workout was really awesome though. It’s a bit of strength, but the stretches are so good and there’s modifications for all the moves. The hour actually went by quickly which was great because…

I wanted to catch up on Secret Life! I always bring my laptop in the kitchen to clean or cook while watching tv shows so I feel productive. I got to work on dinner and followed along with the drama while chopping onions, garlic and ginger.

Dinner: Chickpea & eggplant curry from Appetite for Reduction that was enjoyed on the front porch with Greg & Pepper. I wish I could share the recipe with you all because it is amazing! I’ve loved every recipe I’ve made from this cookbook so far, but I think this is my favorite.

After dinner we went on a walk around the neighborhood so Pepper could get some energy out. After every walk, the minute we take the leash off, Pepper goes crazy and rolls and rubs his face all over the carpet. It’s pretty funny but kinda weird. Does anyone else’s dog do this?!

I’m off to pack lunches and get my gym bag ready because I’m going to try and make a strength class after work. I hope you all have a wonderful Wednesday!

Weekly Love

Just a few things I’m loving this week…

A perfect night! It was such a beautiful night and Greg & I were coming out of the bookstore and saw this gorgeous sky. The air was warm, we had iced coffees in hand and there was a small breeze going by. I love moments that are so perfect like that.

My pants getting loose! A few months ago this pair of work pants fit perfect and now they are way too loose. It’s good & bad because I really don’t care for shopping and don’t want to spend a ton of money on new clothes. Guess it’s skirts and dresses for me for awhile!

Coffee dates! There’s nothing better than coffee, chocolate chip cookies and good company! My drink was an iced soy latte with 1/2 a pump of chocolate. So good.

Other things that made my week » Watching my Gilmore Girls dvds. I go through this a couple of times a year where I rewatch the entire show beginning to end (except the 7th season- nooo way! never again!). /// white converse /// bed sheets & comforters fresh out of the dryer /// ceiling fans /// salt & vinegar almonds!!!! /// stretching more /// my rain boots & umbrella /// meeting friends for coffee /// Dodgeball. That movie cracks me up when the weather has me feelin’ down.

Pumpkin Chili & a Six Pack

I woke up today and the weather was it’s usual stormy self. I don’t know what’s going on with all these storms but it has been non-stop for weeks now. I need sunshine!

I needed a pick me up at work so it was off to Starbucks for an unsweetened iced coffee with soy. After I got back to the office I dug some salt & vinegar almonds out of my bag and got to snackin’. I stopped by Walgreen’s after work the day before and loaded up on them because I’m addicted! I swear they’re the best thing ever.

I came home and decided to do Jillian’s 6 Week Six Pack. Now, I always do level 1 but today I was up for a little challenge so I decided to try level 2 for the first time. WTF. That workout was no joke! I was pouring sweat so bad that I was slipping on the mat during plank moves. I had to pause after it was over before stretching just to catch my breath. That scene up there is where I paused. I imagine Jillian was laughing at my sweaty self cussing in my living room while trying to breathe normally again.

The good thing about the workout was mountain climbers which I never thought I’d say (or type :]). When I started Ripped In 30 I couldn’t do ten seconds of them and today I lasted the entire thirty seconds for two rounds! I can tell that I’m so much stronger and I am loving it!

For dinner I needed something quick and I had seen .running with spoons. recipe for pumpkin chili mexican scramble earlier today and knew I wanted to try it. I’m glad I did because it was really good! I used black beans instead of kidney beans, added a little cayenne pepper and put a little bit of greek yogurt on top. Good stuff!

I hope you all had a wonderful day! I did because tomorrow is Friday and I am so ready for the weekend!

Food Diary

Breakfast: Coffee with unsweetened almond milk. I also had 3 egg whites on two slices of toasted Ezekiel bread, but I didn’t take a photo because I eat it every single day and I’ve run out of different ways to show it!

Morning Snack: Apple and a grande unsweetened iced coffee with soy from Starbucks.

Lunch: I made a quick stir-fry before leaving for work. Here’s what I do: I take a bag of frozen stir-fry veggies and put them in a glass bowl along with some water and microwave for around 3-4 minutes. I drain the veggies, put them in some tupperware, add one tablespoon of this sauce, give it a quick shake to coat and am on my way. It’s really easy to make if you’re running low on time. I usually add quinoa but didn’t have any already cooked.

Afternoon Snack: Some pistachios and an orange.

Dinner: Baked potato with Fage 2% greek yogurt, garlic kale topped with tahini sauce (tahini, garlic, lemon juice, paprika & a little salt), and corn on the cob rubbed with some red miso. I got the idea for the corn from BonzaiAphrodite and even though I don’t have a grill it still turned out great! This dinner was so good, comforting and just perfect for this rainy day.

After I got home from work I did a couple of workouts on ExerciseTV. I did Cardio Groove N’ Burn and Kickboxing. They have a lot of free videos there which is nice.

The kickboxing video was really fast paced and I had a hard time keeping up, but I finished it. The cardio groove video was another story. I cannot dance at all and even though she would go through the moves slowly a few times before doing it at tempo, I just couldn’t keep up at all. Eventually I just started bouncing around the living room like a weirdo to keep moving then got bored and quit halfway through. It was definitely burning some calories, but it’s no fun if you can’t move at the same pace as the instructors. Maybe another day.

Just thinking about trying to keep up with those salsa moves has me exhausted. I think it’s time to head on over to WIAW and check out every else’s creations!

Anniversary Picnic

Yesterday was mine and Greg’s two year wedding anniversary! We weren’t really sure what to do but the day turned out being pretty laid back and fun. We got up early and ran/walked a bit, but it was really hot out and Pepper was burning up so we cut it a little short.

We headed to a coffee shop after (an iced coffee for me & breve latte for Greg) and hung out for awhile.

Then we hit up Earth Fare and got a couple of different kinds of veggie sushi along with some spring rolls. We decided to have a little picnic at a park under the shade of some huge, gorgeous trees.

The view was nice.

The company was good.

And I busted out my SPF 50 and stayed put under the tree to keep my legs at their brightest. haha!
