What I Ate Wednesday

Yesterday morning started with my usual: one egg and one egg white sprinkled with nutritional yeast inside a piece of toasted pita bread. I’ve been having pretty much the same exact breakfast for months now and it still hasn’t gotten old.

Since I’ve cut way back on caffeine I have amassed quite the tea collection. Sometimes I will just have hot water with lemon in the mornings but if not, I always go for this tea. There’s something refreshing about starting the mornings with something warm and lemony.

I get up at 7:30 and make breakfast for Greg and will eat mine while his is cooking (we both have eggs & toast/pita every morning). I normally get hungry again around 9 and almost always have an apple with almond butter.

This is a result of me breaking my French press a couple of months back. I had a bag of decaf coffee in the pantry that I had used to gradually shift away from regular coffee and decided to use the last of it up. I put a mesh strainer with a paper towel full of grounds on top of my mug and poured hot water over it slowly. It didn’t taste as good as using the press, but it worked.

For lunch I made Errign’s fried rice recipe. I have been having this for lunch almost daily because it’s just that good. It’s crazy how simple it is too. I add frozen mixed veggies to mine and at first I thought the green beans would be weird in there, but they’re actually really good.

Around an hour later I had a small salad that consisted of field greens, tomatoes, cucumbers, avocado, sunflower seeds, dulse flakes, and Italian dressing.

For dinner I made red curry soup with rice and kale from the Post Punk Kitchen. I made a couple of substitutions and it still turned out wonderful. I swapped the rice with quinoa and used regular curry powder instead of red curry paste. I love this soup (and every recipe I’ve tried on the site) and love that it makes a ton so I can eat leftovers for a couple of days.

I ended the night with this and a mug of peppermint tea and it was awesome.

It’s been a little quiet around here lately and that is mostly due to the amazing weather we’ve been having (seriously, 70° the past few days) and that I just don’t have much to say. My workouts have been consistent and I eat similar foods daily so I don’t want things to get too boring by sharing the same thing over and over again. What I Ate Wednesday

I woke up yesterday morning bummed that Halloween was over. There were so many trick-or-treaters out the night before and we had a blast giving out candy to them all. The best costume of the night was this little boy who was probably around four years old dressed as Indiana Jones. He was so stinkin’ cute.

Even though Halloween is over, I am happy for a new month because it always feels like a fresh start which is nice. I started November off like I do every other morning by eating a couple of eggs in a piece of toasted pita bread. Lately I have also been drinking a glass of Good Belly first thing in the morning.

I recently read Bonzai Aphrodite’s post on how to make your own kefir and started reading up on probiotics and fermented foods. I went to the store to buy kefir when I spotted Good Belly and it sounded awesome so I picked one up. It’s really, really good and I’m excited to eventually start making my own.

Breakfast wasn’t over just yet. I also had a pumpkin oatmeal cookie that I’d made on Halloween.

About an hour later, I had a couple of cups of coffee with almond milk and a handful of pretzels while reading a few blogs.

I went to the gym around noon and did fifteen minutes on the treadmill and fifteen on the elliptical before I got too bored to go on. I need to stick with group classes because I am so much more motivated to workout in that environment.

I came home and had a bowl of red lentil Thai chili that I’d made the night before. You have to make this chili because it is wonderful! The coconut and curry tastes incredible in an otherwise pretty basic chili recipe.

I had a slice of pumpkin pie brownie after lunch. This was another Halloween night recipe I had made.

I snacked on an orange and a few tortilla chips with guacamole in the afternoon.

For dinner I was craving pasta so I made a bowl topped with a ton of marinara and red pepper flakes.

I roasted some pumpkin seeds in olive oil, salt, and paprika a few days back and can’t get enough of ‘em. I had some last night while drinking a mug of hot tea and watching Transformers. I wanted to watch something a little light after the scary movie fest we’d been having for a few days now.

What I Ate Wednesday

This is actually what I ate on Saturday since I was going to do a food diary post then, but I ended up getting sidetracked so just I decided to save it for WIAW. I woke up that morning to find a package at my door from a friend of mine. I had mentioned to her that there wasn’t a Trader Joe’s here and she ended up sending me some of her favorite TJ finds which was so incredibly sweet. There’s nothing like opening a package with all kinds of new foods and sauces to try!

I got coffee goin’ and then dived right into the crackers she’d sent. They are so good, sturdy and tasted kind of buttery which I loved.

I really wanted to try the aioli mustard and remembered I had some leftover roasted brussels sprouts that would be good with it. The mustard was great with its strong garlic flavor and slight spiciness.

The sprouts were good but I definitely gotta have more than that for breakfast so I fixed my usual: one egg and two egg whites wrapped in a toasted Ezekiel pita.

After breakfast Greg wanted to go to the international grocery to pick up some German foods and ingredients to take to his mom’s. He picked up weisswurst and Bavarian sweet mustard and I got a Kinder chocolate bar to go along with the iced coffee I had bought before we went to the grocery store. I love going to that store and looking at all the packaging design which is how I now decide what chocolate I’m going to buy since I can’t read the labels and don’t like bugging Greg to translate every label and ingredient list for me.

I didn’t eat anything at his mom’s house so I was pretty hungry when I got home. I made a banana and almond butter sandwich (à la Pretty Fit, Pretty Healthy, Pretty Happy) to eat while I was cooking the main course.

I had two plates full of Indian spiced roasted veggies over lentils and it was super good. The veggies roasting filled the house with the most wonderful, warm smell which, along with the open windows and cool air, made for a perfect fall night.

After dinner I made chocolate chip cookie dough blizzards and they definitely satisfied the sweet tooth I had going on. I used this recipe for the cookie dough bites and was snacking on those by themselves all night long. They were seriously good.

Right before bed I had a mug of chamomile tea with agave in my Halloween mug. I’m getting so excited for Halloween to get here and I love seeing all the spooky stuff in stores even if I do have to work up some major willpower not to buy a ton of it. I have been stocking up on candy though and can’t wait for all the trick-or-treaters!

Food Diary

I woke up early, packed Greg’s lunch and started working on breakfast when Hello Kitty reminded me what time it was.

I made an omelet with one egg, two egg whites and nutritional yeast and then wrapped it in a toasted Ezekiel pita. Pepper thinks any food in your hands must be his and will just sit there and creepily stare the entire time I’m taking photos.

I had a tofu fudge brownie too. These things are just so good that I couldn’t wait until lunch to have one.

I didn’t have much food in the fridge so I decided to make a quick trip to the grocery store so I’d have something for lunch. Here’s all my loot!

I bought a ton of food at the store but didn’t feel like making anything so I picked up some sushi while I was there. When I was little I would always go with my mom on grocery shopping trips and we’d buy a ton of food and then stop and get fast food before heading home. I always thought it was so funny, but now I totally understand.

I also stopped by Starbucks and got a tall unsweetened iced coffee with soy.

I had a snack of apples and almond butter later on in the day. I also baked some sweet potato fries later on and totally forgot to take a photo.

When Greg got home I made mini squash pizzas again. These things are so good!

I ended the night with chamomile tea and a bit of agave nectar.

Food Diary

First things first! I made some coffee, but before brewing I added some sweetened cocoa powder and cinnamon to the grounds. I normally do this with pumpkin spice but I was out. I added a bit of unsweetened almond milk and it was delicious.


Breakfast was three eggs (2 whites, 1 whole), sprinkled with nutritional yeast and wrapped up in an Ezekiel pita.

I set up shop in Starbucks again yesterday but it was super busy and I couldn’t sneak a good shot of my drink so I used my photo from Monday. I had a tall unsweetened iced coffee with half a pump of pumpkin spice syrup. I also snacked on peanut butter filled pretzels. Those things are seriously addictive!

I got home and immediately had a tiny chocolate chip cookie.

I had leftover cheezy taco mac for lunch and dinner. That stuff is just so good!

Before bed I had some plain Greek yogurt with agave and vanilla hemp seed granola. I totally forgot to take a photo. I also had a ton of water throughout the day.. probably somewhere around three liters.
