Food Diary #1



This is a new thing I’m doing where I’ll pick a couple days out of the week and post everything I ate that day!

Looks a lil’ gross but it’s so good! Breakfast was overnight oats with coconut milk, raspberries, blackberries, blueberries and a 1/3 cup of yogurt. I also had a Tazo chai tea bag with honey and coconut milk.

Morning snack was an organic gala apple and half decaf/half regular coffee.

Lunch was a veggie stir-fry (tiny bit of szechuan sauce) and 1/3 cup of steamed rice. Also, a salad with romaine, spinach, cucumbers, chickpeas, sunflower seeds and balsamic dressing. Dessert was a tiny piece of brownie and pound cake that I ate before I remembered to take a photo. Water to drink.

We don’t normally eat out, but I was visiting my Mom at Panera and am in love with their tomato soup so I ate dinner there. Half a Mediterranean Veggie sandwich, tomato soup, french baguette and unsweet tea to drink.

Not too shabby today although I shouldn’t have had so much bread at dinner. I love it, but I always feel sluggish and bloated afterwards and that’s no good. I need to stick with Ezekiel bread because I never feel gross after eating it. Does bread make anyone else feel that way?

Daily Recap: Overnight Oats, Recipes and Walking the Dog

Breakfast today was overnight oats again. I kept it simple and just did 1/2 cup oats, blackberries and almost a cup of almond milk. I thought the blackberries and oats looked so nice together in their little jar. This is one of my favorite breakfasts just because there’s not a lot in it and the blackberries add just enough sweetness.

Lunch was a salad with field greens, tomatoes, cucumbers, mushrooms, avocado, sunflower seeds, dulse and balsamic vinegar. Also a sunflower butter sandwich on one slice of health nut bread. The apple and tangerine were there for snacks even though I ended up eating the apple for lunch and not eating the tangerine at all.

It’s almost quittin’ time at the job! We are off the entire week after Christmas so I’ve been taking care of my stash before I leave. It’s always stocked with water and either crispy cheddar or sunflower basil crackers. I also keep almonds around but took care of those first. Yum!

On my lunch break I was browsing health/fitness blogs and found Leftovers For Lunch. I was so happy because she features tons of recipes and the ingredients are things you probably already have around. I immediately starting printing out my favorites and made a grocery list so I can make them this weekend! These looked amazing to me: African kale and yam soup, vegetable curry and sesame honey tempeh and quinoa. I can’t wait to try some of these!

After I got home from work I asked Pepper if he wanted to go for a walk and his tail was a little blur from wagging so fast.. so off we went around the neighborhood. We would alternate jogging and walking and my heart rate was up there, especially with the hill at the end of the street. Whew. We did that for almost twenty minutes and then I did 6 Week Six Pack again. This workout is tough and it wasn’t easier the second time around, but man you get an awesome workout in for only 30 minutes of your time. It’s totally worth it and might just beat out No More Trouble Zones as my favorite workout.

Tomorrow is my last day of work (woo hoo!) and then it’s Christmas time! We celebrate with lunch/dinner on Christmas Eve and my mom called me today to tell me she was getting KFC and then Greg informed me his Mom is ordering pizza for that same day. Ahhh.. I might have to bring along something a lil’ healthy to keep me in check.
