Groceries, Making a Mess & Curry
I hit the gym with my mom yesterday and did some running on the treadmill since it was still raining. She has a membership where she can bring a friend to workout and since my mornings are free now I’ve been going with her this week. Her gym is really nice and you can actually watch what you want on the televisions! At my gym it is stuck on news or ESPN and you’re not allowed to change it. Running goes by so much faster when you’re able to watch a show you like.
My run was pretty good even though I had to do more walking than running towards the end as my right knee felt kinda off and I definitely wasn’t going to push it. I’ve been wearing my Puma trainers to the gym, but I’m thinking I need to start wearing my Vibrams instead.
After the gym I took a much needed trip to buy groceries. We were out of everything so I was excited to stock up on essentials from the bulk bins at my local co-op.
I got home and was refilling my jars of bulk bin goodies when I made a mess with the quinoa. It got all over the kitchen and even in Pepper’s food and water bowls. It took a little while to clean up, but luckily I didn’t lose too much.
If you haven’t checked out the bulk bins at your local health food store you definitely should. You can stock up on so many amazing things for a lot cheaper than usual. I ended up getting red lentils (never tried making these!), carob chips, nutritional yeast, sunflower seeds, vanilla hemp granola and quinoa.
I picked up some veggie sushi for lunch while I was there and it was really good. Just what I needed!
For dinner I really wanted to surprise Greg and make something really good out of this chicken he had sitting in the fridge. I’m a vegetarian and I can’t ever remember preparing chicken so I knew I needed to find a recipe that sounded fairly easy. I found sweet potato chicken curry from Leftovers For Lunch and it sounded great.
I got all the veggies cut up and spices measured out and when I opened the chicken I just couldn’t do it. I don’t get grossed out when people eat meat in front of me or anything.. I could care less. But having to touch it and cut it up myself? Yeah, no. It totally made me gag so I made the quick substitution of extra firm tofu.
It turned out awesome and Greg ended up liking it too. I will definitely be making this again soon. It was so filling and had a ton of protein from the tofu and chickpeas. The recipe makes a ton so it’s perfect to make early in the week and then eat on for a few days.
Do you shop bulk bins regularly? Anything I should look out for to try?
Food Diary
Breakfast: Two slices of toasted Ezekiel bread with three egg white and iced coffee with unsweetened almond milk.
Morning Snack: Apple
Lunch: Kale salad (recipe from Oh She Glows). Stir-fry using a bag of frozen mixed veggies and this sauce I made the night before. The sauce was really good! The recipe called for anise stars which I didn’t use and it still turned out fine. I had never heard of that spice before, but it is beautiful! Check it out:

Afternoon Snack: Banana
Late Afternoon/Pre-Workout Snack: Ezekiel pita bread with almond butter. I ate half the pita with almond butter when I got home and when I realized I forgot to take a photo. I knew the right thing to do was eat the other half in order to take a photo so you all could see. :]
I wanted to work out but I didn’t feel like strength training or intense cardio so I went with Bob Harper’s yoga DVD. I’ve had this for awhile but never done it. Hour long workouts are just so hard for me to get into unless it’s a group exercise class with someone really there to motivate me.
This yoga workout was really awesome though. It’s a bit of strength, but the stretches are so good and there’s modifications for all the moves. The hour actually went by quickly which was great because…
I wanted to catch up on Secret Life! I always bring my laptop in the kitchen to clean or cook while watching tv shows so I feel productive. I got to work on dinner and followed along with the drama while chopping onions, garlic and ginger.
Dinner: Chickpea & eggplant curry from Appetite for Reduction that was enjoyed on the front porch with Greg & Pepper. I wish I could share the recipe with you all because it is amazing! I’ve loved every recipe I’ve made from this cookbook so far, but I think this is my favorite.
After dinner we went on a walk around the neighborhood so Pepper could get some energy out. After every walk, the minute we take the leash off, Pepper goes crazy and rolls and rubs his face all over the carpet. It’s pretty funny but kinda weird. Does anyone else’s dog do this?!
I’m off to pack lunches and get my gym bag ready because I’m going to try and make a strength class after work. I hope you all have a wonderful Wednesday!

Food Diary
This morning I woke up and decided I wanted to change things up with breakfast. I keep seeing green monsters on all the blogs I read and wanted to try my own. It was awesome! It’s a really simple recipe and it tastes so good.. I just wish I’d tried it sooner!
Breakfast: Green monster (recipe from Oh She Glows). I also had two slices of Ezekiel toast and three egg whites.
Morning Snack: Apple
Lunch: Spinach & chickpea curry from Vegan with a Vengeance and quinoa. It doesn’t look all that appetizing but it was delicious!
Afternoon Snack: Banana & an iced coffee.
Dinner: Kale salad (recipe from Oh She Glows). I’d been wanting to try this recipe for awhile now and finally had most of the ingredients on hand to make it. My version had kale, cucumber, tomato, sunflower seeds, avocado, carrot and a tahini dressing. Amazing!
There are insane storms here and more on the way so I’m outta here for tonight! The weather has been so weird lately and it’s kind of freaking me out. Are any of you guys having crazy weather too? If so, stay safe out there!

I’m getting way too predictable with these food diary posts! It’s fun to participate in What I Ate Wednesday though so I wanted to post today. In addition to all this, I had a ton of water to drink.
Breakfast: Iced coffee with unsweetened almond milk. 3 egg whites on toasted Ezekiel bread.
Morning Snack: Apple
Lunch: Quinoa with an eggplant and broccoli stir-fry. I used one tablespoon of this sauce. I also had half of a baked sweet potato.
Afternoon Snack: A tall soy coffee frappuccino with no whip that I drank so fast I forgot to photograph!
Dinner: Whole wheat pita pizza with eggplant, zucchini, tomato and broccoli.
Evening Snack: Banana with almond butter. So good!

Lunch Time! Spicy Eggplant
I was inspired by this spicy eggplant recipe while looking for something to make for dinner last night. I was a lil’ lazy though and made it even easier by using a pre-made sauce. It’s loaded with sodium so try not to add to much or just make your own.
All I did was cube two small eggplants and fry them in some olive oil along with garlic for about 8 minutes. I added bean sprouts and 1/3 cup of the sauce around the last minute or so of cooking just to heat it all up. It turned out great and very spicy which I love. I served it with some quinoa and it was really good.
I had so much leftover that I packed it for lunch today and it was wonderful!
