Weekend Happenings
Right after work on Friday I met up with Greg and some of his work buddies at The Tomato Head for dinner. I had the veggie chef salad which had cucumber, tomato, broccoli, artichoke hearts, green pepper, sprouts, baked tofu, mushrooms, red onion, olives, carrots and red cabbage with honey mustard dressing. It felt so good to eat all those veggies!
Saturday started with me waking up at 5am to volunteer at a 10k for Knoxville Track Club. At first I was handing out t-shirts but then got to hand bibs out since the person who was originally doing that was running the race and had to head out to go warm up. It was a lot of fun and I met some super nice people.
When I got home I was really hungry and decided to open the jar of honey strawberry spread that Krissie from Philly Nerd Girl sent me as part of our local goods exchange. Ohhhh, man.. this stuff is good! I had it on a piece of toasted Ezekiel bread and it was delicious.
After that was a pretty hard spin class with Priyanka. The instructor was awesome and she wore me out! I was so beat from waking up early and all the hills and climbing in spin that a nap was definitely in order. I bummed around the house for the rest of the night and relaxed which was nice.
On Sunday we went for a walk early to avoid the crazy heat and then got ready and met Greg’s sister at a local Ethiopian restaurant for lunch. I’d never had it before but man it was good! We all got the vegetarian samplers and were stuffed in no time. I’m pretty sure it was partly because you don’t use utensils, but grab the food with pieces of injera bread.
After lunch, me and Greg’s sister decided to have a cooking party. We are going to start getting together on Sundays and cooking huge batches of food to eat throughout the week for lunch. We headed to Earth Fare and did some shopping for all the good stuff we were going to make.
I made African kale & yam soup from Leftovers For Lunch and she made this amazing butternut squash and chickpea dish that had couscous, almonds, cilantro and tzatziki.
Seriously.. how good does this look?! Also, do you notice the two lil’ bunnies in the above photo? They love to hang out in our backyard and munch on grass and veggie scraps.
Now that I am set on some healthy lunches for the week I am one happy lady. It takes so much stress off knowing that your meals are ready to go.
I hope that you all had an awesome weekend! Did you do anything fun or just hang out and relax some? It’s been hard to do too much here because of the heat. Hopefully it’s not too crazy hot where you’re at!
Enchiladas, Kale and Snow
Greg & I did some Christmas shopping yesterday and my car started to act a lil’ funky. I hadn’t had heat for a couple of days and then the engine started getting extremely hot all of a sudden. We made a stop to Wal-Mart just for antifreeze- that’s it. But, of course, I took a stroll down the fitness aisle since it was so close to the car stuff and I ended up leaving with a lot more than antifreeze.
I got Jackie Warner’s Personal Training DVD, a 10lb kettle bell, jump rope and ab wheel. The ab wheel is more for Greg, but I hope to one day be able to use the thing without shaking like crazy and falling to the floor dramatically. That thing is hard! I got the kettle bell to use with Jillian Michaels’ Shred-It with Weights DVD. I had been doing this workout with a 5lb. dumbbell and while I still felt it the next morning, I wanted to try it with the kettle bell it was intended for. It is a completely different workout with it! I never felt it in my abs when using the dumbbell, but now I totally feel it in my core and the whole video is a lot more challenging. I haven’t progressed to level 2 yet, but I can’t wait to try it out!
I’ve heard nothing but good things about Jackie Warner’s DVDs. This one has 42 five star reviews on Amazon, so I figured I should try it out. I need something different than my Jillian Michael’s videos to do at home since it’s getting a lot colder out. I’ll do a full review once I do it, but the only thing I don’t like it that it’s just one thirty minute workout. At least with Jillian’s DVDs you usually get two to three workouts for the same price which is nice.
Also, if you don’t wanna get out and head to the gym and are bored of your usual videos, try out SparkPeople’s youtube workouts. They have tons of really short videos that work really well when you’re tired of the same ol’ thing. My favorites are the 10 Minute Jump Rope Cardio Workout (you can do it without a jump rope and just do the motions), Butt Blasting Workout and the 10 Minute Cardio Kickboxing Workout.
After our Wal-Mart visit, we decided to treat ourselves to dinner at the local Mexican restaurant. They have the best salsa.. thin and not all chunky like most salsa. They have a separate vegetarian menu and I got a bean burrito and enchilada. The enchilada sauce is so good. Good thing I bought all that exercise stuff since I needed to burn all this off later. :]
I came home and took a nap. When I woke up it had snowed like crazy! While Greg took Pepper out to play in it, I made some kale chips. Everyone talks about how great these are but I did not like them at all. I love kale but I couldn’t get into these chips. I just added salt & olive oil.. maybe I should have used Bragg’s? I’m not sure and I won’t find out because I don’t think I’ll be trying these again. I’d rather use my kale for something good, ya know?
