Make It Yourself: Chipotle Burrito Bowl
The tiny city I live in finally got its first Chipotle a few months ago. Ever since then I’ve been way into their veggie burrito bowls and fresh ingredients. I am trying to save money and prepare my own, healthy meals so I tried my hand at making my very own Chipotle-esque burrito bowl at home.
This post from Iowa Girl Eats really helped me get started and her recipe for their rice sounds amazing. I kept my brown rice plain because that’s how I like it. Of course her rice recipe would taste much more like the kind at Chipotle.
Take your black beans and sprinkle in a bit of cumin, chili powder, salt, oregano and cayenne pepper. I microwaved these to make things a little easier.
I used a salsa recipe from A Healthy Slice of Life and it turned out wonderfully! I’d always shied away from making my own salsa because it seemed like so much work but it was actually very easy.
I then heated up some green pepper, extra firm tofu and mushrooms along with some cumin and chili powder.
Get the biggest bowl you can find and put your brown rice, veggies, tofu, salsa and guacamole (I used Wholly’s spicy- so good!) and dig in! This was so delicious and really hit the spot.

Just a few things I’m loving this week…
Chocolate tofu pie! This is the easiest recipe ever and I used to make it all the time, but for some reason I stopped. Sarah at Desirous of Everything asked me to do a guest post and I knew this recipe would be perfect! You’ll have to head on over to her blog to get the recipe!
Eating outside! The weather has been nice enough to sit outside and eat my lunch. It’s not too hot out and even though it has been raining off and on there is a little gazebo outside my office building where I can take my lunch to. It’s so nice to get some fresh air and out of the office.
Tofu tikka masala! I got this recipe from Priyanka at The Healthy Diary and it is delicious! I used Twin Oaks extra firm tofu and it worked perfectly in this dish. Sometimes when I buy other brands they fall apart even though they are labeled extra firm, but Twin Oaks is awesome and won’t crumble on ya.
Other things that made my week » Catching up on tv shows which include 16 & Pregnant, Secret Life of the American Teenager & Ice Loves Coco. I like ‘em trashy. Does anyone else think Coco is absolutely adorable though? Tofu and Avocado Sandwiches and Stair Steppin’
Today was a struggle to get to them gym. I felt so unmotivated and did not want to work out at all, but once I actually got started I felt so good and had a ton of energy. The gym is a lot busier than usual so it makes for excellent people watching which made time go by pretty fast.
I started out on the cross trainer for thirty minutes, then fifteen minutes of the stair master on level 8 and 25 minutes of light jogging on the treadmill. I thought that I was going to die on the stair master.. that thing is no joke! I almost had to quit around seven minutes in, but I just took a quick pause to grab some water and then finished my fifteen minutes. That maximum heart rate you see up there was from my time on the stair stepper. haha.
After the gym I took a quick trip to our local co-op. I had a lot of things to pick up and ended up getting:
eggs, quinoa, chia seeds, dulse flakes, shredded coconut, almonds, carrots, garlic, ginger, ezekiel bread, coconut almond granola, quinoa spaghetti, coffee, nutritional yeast, bag of gala apples, tomatoes, sunflower basil crackers, tex mex trail mix, hummus mix, salsa and coconut water
I’m really excited to try out the quinoa pasta and see how it compares to regular noodles. I am also loaded up on snacks for work now which is good. I’ve been out of work food for awhile now and on Friday and I got so hungry that I made a trip to Panera for some of their tomato soup.. that is some good stuff! I’d rather have healthier options available at my desk though.
After the gym and grocery shopping, I was super hungry and decided to make one of our favorite quick lunches- tofu sandwiches! We like to visit Asheville, North Carolina quite a bit and we always make a stop at Rosetta’s Kitchen which is our favorite place to eat there. One day I ordered their baked tofu avocado sandwich and it was so amazing. My version is modified a bit, but still very good.
Toast your bread and spread a bit of hummus on one side.
Add your tofu slices. Make sure you’re buying organic tofu- the non-organic types are loaded with nasty pesticides! Also, I don’t bake mine.. I just throw it on there straight out of the package.
Add some sliced tomatoes.
Now take your other side of bread and mash half an avocado onto it.
Add some field greens or any other veggies you’d like and put the halves together.
I ate mine with asparagus on the side. I put a bit of olive oil into a pan and heated the asparagus with a bit of Bragg’s and it tasted wonderful! This sandwich is always good to make when you want something quick and tasty.
